Cattle Sales

Dixieland Cattle Company offers grass-fed, grain-finished cattle on a pre-order live share (whole, half, or quarter) basis. We raise and finish all of our cattle the same way as if we are putting them on our table, and many of them do end up there. As a cattleman, proper care for the herd is not something I take lightly. We work with our veterinarian to properly care for our herd while allowing our cattle a natural life. Antibiotics are not part of our primary care plans and are only used in the less-than-common event that an animal becomes sick or injured.

Our cattle typically average a live weight of 1,050 pounds at the time of processing. This will yield a dressed weight of approximately 550 pounds, and meat products totaling an average of 400 lbs. The weight of final meat can vary by up to 25% based on your personal cutting preferences (ie bone-in vs bone-out or keeping your roasts vs grinding them up).

Our pre-sold custom-finished cattle are delivered to and processed by The Russell County Butchery in Seale, AL. We have just started using RBC for our cattle processing needs, and we are pleased with their quality of service, the cleanliness of their facilities, the wide variety of custom options, and their passion for meat science as it allows for new methods of cutting meat and new ways to utilize previously under-utilized muscles.

Cost – The final cost that you pay to Dixieland Cattle will be based on the final dressed weight of your share multiplied by the sale price. You will also make payment to RBC for the processing at a cost of $100 per animal (divided into shares for split animals) plus $0.90 per pound dressed weight.

The table below shows the quantities of cuts you could expect from the various shares of an animal. This breakdown reflects how I choose to have my cattle processed and will vary based on your preferences.

I have calculated cooler and freezer space recommendations below. These are the minimum spaces that will hold the specified amount of beef. If you want to have room to organize the freezer so you don’t have to move your steaks to get to your roasts and the like, I would recommend allocating double the freezer space calculated below.
